Hand: It’s 8:30 on a Friday morning and nine of us are sipping gin around a long table. The group calls itself a “ginsmithing panel,” which, I suppose, sounds more respectable than an early morning drinking party. Several of these dawn sippers have been attending these biweekly gatherings at the Bardenay distillery in Eagle for years. Scott Probert [PRO-burt] is the head distiller:
Probert: So what we’re doing is we’re comparing our standard batch of gin with the proposed batch of gin and we’re going to smell and taste and see how they match up.
