In a recent dream, I was standing in a field telling farmers that quality is more important than quantity of food. For over a century, U.S. agriculture has been driven by an obsession to increase the quality of food produced. In the process, we have destroyed the microbes in the soil with Round Up, and poisoned the entire food supply, including ourselves, with a host of chemicals. What can I do to remedy the situation? Something so simple, so elegantly radical: eat local, organic foods. I choose cherries ripened under Fourth of July fireworks, garlic pulled from the hot August soil, and apples blushing in the September sun. I choose to eat with awareness, with gratitude for my family and the food I'm eating. I choose quality rather than quantity of food.
