Hand: It’s a bitter, cold day at the Koenig vineyard southwest of Caldwell Idaho. But it’s perfect weather for the subject at hand: Ice wine.
Koenig: Well, ice wine is unique in that the grapes have to be frozen
Hand: That’s Greg Koenig, winemaker for Koenig Winery and Distillery.
Koenig: And the reason for that is to make ice wine, which is a very concentrated, intense wine, the juice needs to be concentrated and ice wine is concentrated by freezing. But to do that, you have to achieve temperatures of at least 18 degrees fa...
