Sourdoughenvelopea_small For Alaska residents Alison Arians and Dan Schwartz, baking bread has always been a form of therapy. Dan turned to it during grad school, when he grew tired of studying, of all things, yeast genetics. Alison took it up when she started getting down on her job. Years later, the couple has turned their side line into a main line, with Rise & Shine Bakery, the first in Alaska to offer a 100% whole-wheat version of the state's unofficial bread: sourdough.

Not that baking whole-wheat sourdough is a piece of whole-wheat cake. There's a science to it, and in this sound-rich story, we learn the chemistry -- both culinary and romantic -- of how it all works.
