Cindyjonesphoto_small Cindy Jones is an organic farmer based in Orange County, New York. She sells her produce at various farmstands throughout the region, as well as directly to some of New York City's finest restaurants. Once a month, a chef from one of those restaurants makes the trek upstate to the farm to cook dinner for 50 people. The farmstand is transformed into a gourmet restaurant for the evening, as the chef improvises a menu based on what's fresh that week. Cindy's essay talks about the effort and "seat of the pants" feeling that's always involved in these dinners, and the unmistakable feeling she always gets at the end of the evening.
